  • You want a large skillet or frying pan so everything fits!
  • You’ll want a spatula or wooden spoon. Why wood you ask? To keep from scratching your pan!!
  • Before adding the mushroom mixture to your bread, make sure to roll out the bread slices thinly using a rolling pin. This is honestly the most important step. You want them very, very thin.
  • You are going chop up the mushrooms and other ingredients as well as remove crusts from the bread. Use a really sharp knife – it makes a huge difference in ease.
  • Cutting Board: Essential for chopping up all your ingredients.
  • Measuring Cups and Spoons: Needed for measurements of butter, flour, cream and seasoning.
  • When its time to bake the rolls, use a baking sheet. A nice big one if you have it.
  • And on that baking sheet, make sure to use parchment paper or non-stick spray to avoid any mess.

Delicious Mushroom Rolls

These mushroom rolls have always been so special to me – as long as I can remember.
My mom made them for every special family gathering. Growing up in the Northeast, we'd gather around the fireplace and savor every bite.
It wasnโ€™t just the taste (though theyโ€™re amazing); it was the care and warmth behind each roll.
Now, Iโ€™m passing this very special recipe to you, I truly hope it brings the same joy to your table.

Ingredients

  • 1/2 lb mushrooms, cleaned and finely chopped
  • 1/4 cup butter
  • 3 tbsp flour
  • 3/4 tsp salt
  • 1 cup heavy cream
  • 2 tsp minced chives
  • 1 tsp lemon juice
  • 1 loaf family-sized, fresh THIN SLICED white bread (Pepperidge Farm or similar, thin sliced recommended)

Instructions
 

  • Clean and finely chop the mushrooms.
  • In a pan, sautรฉ the chopped mushrooms in butter over medium heat for five minutes. I use a food processor on pulse – just a few times will do it!
  • Blend in the flour and salt with the mushrooms, stirring until fully incorporated.
  • Gradually stir in the light cream, and continue cooking the mixture until it thickens.
  • Add the minced chives and lemon juice to the thickened mixture, stir well, then remove from heat and let it cool.
  • While the mixture cools, prepare the bread by removing the crusts from all slices. Roll each slice thin with a rolling pin. Really pack it down.ย  Get it almost paper thin.ย  This will make it easy to roll later
  • Spread the cooled mushroom mixture evenly over the rolled-out bread slices.
  • Carefully roll up each slice with the mixture inside. At this point, you can pack and freeze them for future use.
  • If serving immediately, defrost the rolls (if frozen), cut each roll in half, and toast on all sides in a preheated 400ยฐF oven until golden and crisp.
