How to make Chicken Fajita Pasta
Step 1: Marinate the Chicken and Prepare the Vegetables
- Marinate the Chicken: Combine the chicken pieces with lime zest, lime juice, olive oil, honey or agave syrup, soy sauce, orange juice, and fajita seasoning. Let it marinate for at least 30 minutes to soak up all the flavors.
- Prepare the Vegetables: Slice the bell peppers and onion. Set them aside for sautéing later.
Step 2: Cook the Chicken and Vegetables
- Cook the Chicken: Heat olive oil in a large skillet and cook the marinated chicken until it’s nicely browned and cooked through. Remove the chicken from the skillet and set aside.

Ingredients
Pasta and Main Components
- 8 oz pasta, any shape
- 1 lb boneless skinless chicken breasts, cut into small bite-size pieces
- 2 tbsp olive oil (for cooking)
- 2 bell peppers, mixed colors, seeded and sliced
- 1 medium onion, sliced
- 6 cloves fresh garlic, minced
- 3/4 cup heavy cream
- 4 oz cream cheese, softened
- 1/2 cup shredded cheddar cheese
- Freshly ground black pepper, to taste
- 1/4 cup sour cream (optional, for sauce or garnish)
- Fresh cilantro (for garnish, optional)
- 1 tbsp additional fajita seasoning (for veggies)
Marinade
- Zest of 1 lime
- 1/4 cup lime juice
- 1/2 cup olive oil
- 1 tbsp honey or agave syrup
- 1 tbsp low-sodium soy sauce
- 1/4 cup orange juice
- 2 tbsp homemade or low-sodium fajita seasoning
For Finishing
- Juice of 1/2 lime (adjust based on taste after cooking)
- Flaky sea salt, to taste
Instructions
- Combine lime zest, lime juice, olive oil, honey, soy sauce, orange juice, and fajita seasoning in a bowl. Add chicken pieces, ensuring they’re well coated. Marinate in the refrigerator for 15 to 30 minutes (MAX)
- Cook pasta according to package instructions until al dente. Drain and set aside.
- Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Remove chicken from the marinade (discard any remaining marinade) and cook until golden brown and cooked through, about 5-7 minutes. Remove from skillet and set aside.
- In the same skillet, add the remaining tablespoon of olive oil. Add sliced bell peppers and onion, sprinkling them with 1 teaspoon of fajita seasoning. Cook until the vegetables are slightly softened and charred, about 5 minutes. Add garlic and cook for an additional minute until fragrant.
- Reduce the skillet’s heat to medium. Stir in heavy cream and cream cheese, cooking until the cream cheese is melted and the mixture simmers. It is very important to pay attention to the thickness of the sauce at this point. If it is not think enough for your liking, let it simmer for 15 minutes (or more) to thicken up before you add the pasta.
- Add the cooked pasta to the skillet, tossing well to ensure it’s evenly coated with the cream sauce.
- Return the cooked chicken and sautéed veggies to the skillet, mixing everything together.
- Sprinkle cheddar cheese over the pasta mixture, stirring until the cheese is melted and the sauce is smooth. If the sauce is too thick, thin it with a little pasta water.
- If using, stir in sour cream. Adjust the seasoning with black pepper and flaky sea salt to taste. Squeeze over the juice of 1/2 lime, giving it a final stir.
