Mushrooms
Mushrooms are one of the most underrated umami powerhouses in the kitchen. The deep, savory richness they bring to a dish is hard to explain but you taste it, boy do you taste it. Then, of course, you start finding reasons to add them to everything.
Soups get deeper. Sauces get richer. A simple pasta becomes something you’d pay good money for at a restaurant. Get them right and they and they add lots of flavor, but they (can) become the reason the dish works so perfectly!
