Okay so I grew up in a house where dinner meant meat. Full stop. A plate without a protein was basically just a side dish and nobody was happy about it.

It took me an embarrassingly long time to figure out what vegetables are actually capable of. An onion that’s been going low and slow for forty minutes? Sweeter than you’d believe. Cauliflower that’s been in a hot oven until it’s got dark, crispy edges? My kids ask for it by name now. I am NOT kidding!!
No meat doesn’t mean no flavor. It just means you have to be a little more intentional about how you build it. These recipes do that work for you.
